Marinated Tomatoes Recipe

I found this in a magazine and I must say it is absolutely delicious. And very easy to make. You do need a bit o patience though.

Ingredients (for 3 jars):
  • 1,5kg of cherry tomatoes (or small tomatoes)
  • 3 dl olive oil
  • 1 tbsp of mashed garlic
  • 1 teaspoon salt
  • 2 tbsp mediterranean herbs (pretty much a mix of things, like basil, rosemary, mint, oregano etc)
You cut the tomatoes in slices. I added paprika to the tomatoes, mostly because I had it lying around, but it does taste good in the mix. You put the vegetables in the preheated oven, 125°C for about 3h. I left mine for 3h and I think it would be good to maybe leave them for 3,5 or 4 hours. I guess you can sundry them, if you live in a hot climate :)

In the meantime you mix the olive oil with the spices and prepare 3 or 4 jars.

When the vegetables are done, take them out and put them in the jars. Then just add the marinate and close the jars.

For the best flavour, wait a few days before tasting. Of course I waited two whole days :) and almost finished one jar in one day. But... enjoy!!!
